General Statement of Job
A Food Service Coordinator supervises a group of Inmate Workers in the production of daily meals for the inmate population. This person trains inmates to prepare and deliver food that is wholesome and palatable on an established schedule. A Food Service Coordinator ensures food service operations meet Health Codes, Florida Model Jail Standards, Florida Corrections Accreditation Commission requirements, and any further standards and guidelines set forth by the Food Services Manager. This person plays a key role in controlling food cost and maintaining a safe, sanitary kitchen. Decisive leadership and continual instruction of Inmate Workers are significant activities in this role. The Food Service Coordinator reports to the Food Services Manager.
Minimum Qualifications
- One year of experience in a restaurant or food service.
- One year of supervisory experience.
- Basic knowledge of cooking techniques.
- Or equivalent combination of education and experience.
- Must possess a valid driver’s license.
Essential Job Functions

- Regular and prompt job attendance.
- Build a team from a diverse group of Inmate Workers.
- Train Inmate Workers in safe food preparation and sanitation then maintain a high level of performance in these areas.
- Make inmate job assignments and direct the flow of work in the kitchen.
- Ensure the correct number of meals are delivered to each housing unit.
- Train Inmate Workers on the preparation of modified diets and ensure these diets are delivered to the appropriate inmates.
- Inspect the kitchen and conduct deep cleaning as needed.
- Control food cost and supply usage.
- Train inmates on workplace safety and enforce safe practices.
- Work with other Food Service personnel to ensure freezer pulls and prep work are done for future meals.
- Create or amend recipes for food production as directed by the Food Services Manager.
- Maintain all required logs and documentation.
- Monitor the condition of all food service equipment – including cooler and freezer temperatures.
- Complete maintenance requests as needed for equipment and facilities.
- Communicate with other agency personnel to ensure the smooth operation of the facility.
- Maintain order and lead Food Service Inmate Workers decisively in all circumstances.

- Deal with difficult individuals in a correctional setting.
Standards to Perform Job Functions
Physical Requirements:
- Sit up to 4 hours per day.
- Stand up 8 hours per day.
- Walk up 6 hours per day.
- Frequently lift up to 20 lbs.
- Occasionally lift up to 50 lbs.
- Frequently bend, reach, squat, or twist.
